Description
Kaiyo is a Japanese whisky aged in mizunara oak and bottled without chill filtration. Mizunara is a Japanese oak that is prized, and difficult to work with, and it gives whisky a distinctive character. The name means ocean.
Expect a delicate nose with vanilla, along with gentle spice, light fruit and the subtle sandalwood and incense notes often associated with mizunara. Whisky styles vary widely around the world, and each region's climate, grain and cask choices shape the flavor in its own way.
Sip it neat or with a few drops of water, so that the subtler notes can come through. A few drops of room-temperature water can open up the aroma, and it pairs well with dark chocolate, nuts or aged cheese.
